To craft, but never artificial – that is the motto of Bernhard Gruber, the creative mind behind the fromagerie that he has established as his own cheese stronghold. It’s no wonder he now grins from ear to ear, often looking around during tastings and tours with a hearty “Cheese.” After all, Gruber is a man who has seen it all in the culinary world: from luxury hotels to the royal court of Bhutan and onto the Alpine cheese dairy. However, he found his calling in the latter, and for good reason: Cheese became to him the Holy Grail of Gastronomy. Versatile, vibrant, and always surprising – a true masterpiece of nature.
In his cheese workshop, just a stone's throw from the impressive Riegersburg, the Salzburg resident experiments with Austria's best cheese specialties. The ingredients are as diverse as the flavors – from Uhudler grape essence baths to mountain herbs and even Zotter chocolate, which elevates certain cheese varieties. And even as a layperson, you have access to this "cheese lab," where every bite is an experience, and the view of the Riegersburg has its own charm.
Tours & Tastings – An Experience for Every Palate
For groups, the fromagerie offers various tours, including the "Large Tour to Discover the World of Cheese,” during which you can taste ten currently ripe cheese varieties. For food lovers, there’s the "Cheese-Wine Harmony," where perfectly matched wines are served with the cheese varieties. Particularly recommended is the "Cheese-Craft Beer Harmony," where regional craft beers perfectly complement the cheese varieties.
Individual Tasting – Enjoyment for Individuals
A special highlight is the tasting plate in the shop, where ten current cheese varieties are served together with fresh bread. Here, you will learn everything about the different cheese types – and upon request, various raw milk butter varieties can also be tasted.
